A few weeks ago I worked on a Spring Cocktail campaign for Waitrose Cellar.

I designed a Prosecco cocktail for all those special occasions that pop up in Spring that was published in their Waitrose Weekend magazine. It was a hard job creating it. I had to go shopping in Waitrose with vouchers for cocktail ingredients, and then I spent a difficult evening creating and sampling cocktails, that ended with us drunkenly discovering that Drop the Dead Donkey was on You Tube and getting very excited about it. It’s a sucky job, but someone has to do it, right?

Ok, well probably not, but still, today I thought I would share my final cocktail recipe with you.

If you fancy a sophisticated evening with friends sipping elegant cocktails this weekend then give it a go. Alternatively you can drink it like I did. In your pyjamas while watching dated 90s TV series on You Tube (note, Crystal Maze is on there too!).

I called my cocktail Prosecco Passion, because I am useless at names and I like alliteration! The ingredients sound unusual, and you probably won’t find them in the corner shop, but you should be able to find them in Waitrose if you have one near you!

Because it contains spiced gin I think this is a perfect winter cocktail, as well as being delicious sipped on warm summer nights!

Prosecco Cocktail – The Prosecco Passion

25ml Opihr spiced gin (This is delicious! There’s a stockist search on their website as well!)
25ml Teisseire Passion Fruit syrup (This is that French stuff in a metal container, any passionfruit syrup would work though!)
Top up with Prosecco
Serve in a coupe glass and garnish with half a passion fruit sprinkled with edible gold glitter for an extra bit of fancy!
