Healthy Lunch Sandwich Filling – Creamy Chicken with a Kick

Finding interesting, high protein lunches can be a big challenge if you’re trying to balance your diet. Especially if you need something that you can take with you to eat at work, and you perhaps don’t have access to a kitchen to heat things up.

Recently Warburtons got in touch to introduce me to their new Protein range, so it seemed like a good opportunity to share a healthy sandwich filling that I’ve been making for a while. I tend to make this in large batches, then divide it into individual portions and keep it in the fridge for lunch each day.

It’s a great alternative to fat filled creay sandwich fillings with mayonnaise. Sometimes I also add a little 0% fat greek yoghurt which loosens the mixture up a little.

Here I’ve served it in one of the Warburtons Protein rolls. They have around 9g of protein per roll that comes from pulses and wholemeal flour, so are a great way to bump up your daily protein intake. I’ve also served this filling in wraps or as a filling for a baked sweet potato which are lower in protein but still delicious ways to eat this. The Warburtons protein range also includes wraps, sandwich thins and sliced bread, all of which would work equally well with this filling.

Creamy Chicken with a Kick 

Makes 4 portions

Ingredients

400g Chicken Breast
200g Light Cream Cheese
Salsa
Hot Sauce
4 x Warburtons Protein Rolls

Method

Grill or bake your chicken breasts and leave to cool.

In a large bowl shred the chicken by using 2 forks to pull the chicken breasts apart.

Add 200g light cream cheese, approx 3-4 large dessert spoons of salsa and a splash of hot sauce to taste, depending on how spicy you like it!

Mix together well.

Divide into 4 portions and serve in a Warburtons Protein Roll, or keep refrigerated until needed.
