Sunday brunch is a meal that needs to feel a bit like a treat.
Today I had the luxury of a little lie in, followed by a late breakfast/brunch before getting on with the rest of the day. After a few days holiday over Valentines I’ve eaten a little too much, so wanted to come up with something healthy ish, but luxurious feeling for brunch.
It hardly feels worthy of a recipe, it’s so simple. Avocado isn’t “bad for you”, it can help lower cholesterol and blood pressure and the fat it contains is the good un-saturated fat, not the nasty saturated kind.

Ingredients (serves 2)
1 avocado
2 eggs
50g grated cheddar cheese
Dried Red Chilli Flakes
2 rashers bacon
Preheat the oven to about 175 degrees Centigrade (350 degrees Farenheit or Gas Mark 4)
Take 2 small ramekins, cut the avocado in half and scoop out the inside in chunks. Divide the avocado equally between the ramekins.
Make a small indentation in the centre of the avocado (about the size of an egg yolk!) and crack an egg into each ramekin. Making the yolk sit slightly lower than the white should allow the white to cook and the yolk to stay runny.
Sprinkle 25g of grated cheese and a few dried chilli flakes over the top of each ramekin and place in the oven for about 15 minutes until the whites are set and the cheese is melted and browned
Obviously served as it is this is a vegetarian meal, I added a slice of bacon on the side as I find the saltiness really complements the creamy avocado and I happened to have some left in the fridge. You could also chop the bacon, pre fry it in a non stick pan and add it to the bottom of the ramekin with the avocado.
Hey presto, one tasty treat for brunch, containing about 455 calories and one of your 5 a day. It does contain cheese and bacon, both hardly health foods, but everything in moderation is my mantra, and Sunday brunch could be a whole lot worse!
