Recipe: Grilled Nectarines with Cinnamon Yoghurt

I have loads of things I want to write up for this blog at the moment, including some reviews, but time just keeps getting away from me.

I’m away for most of next week, so probably won’t have time for much in the way of posting, but I thought I’d leave you with a quick and easy dessert recipe. According to My Fitness Pal this contains about 210 calories, you could knock off another 60, taking it down to 150, by not brushing the nectarines with oil and leaving out the peach liquer, but it won’t be as good, go for a 15 minute walk instead.

Ingredients (Serves 2)

2 nectarines

2 tsp approx Olive oil

Ground Cinnamon

Runny honey

150g 0% Fat Greek Yoghurt

Peach Liquer (optional)

Mix 2 tsp of honey and a sprinkle of cinnamon with the 0% fat greek yoghurt and refrigerate while you prepare the nectarines.

Slice the nectarines in half, remove the pits and brush or drizzle the skins with a little olive oil. Place them under the grill, cut side down, until the skin starts to blacken slightly.

Place the nectarines in a grill pan cut side up and drizzle with 2 tsp of honey, a sprinkle of cinnamon, and if required, a little peach liquer, make sure the nectarines are arranged so they will stay upright in the pan and any juices will collect in the pits. Return to the grill for a few minutes.

Serve the nectarines drizzled with any juices that are left in the grill pan, with a dollop of the cinnamon yoghurt.

    I make this quite often but I’ve never thought to add cinnamon. Good call, as it helps to rebalance blood sugars!
